Indian River View

I was staring at the computer the whole morning yesterday and had no inspiration to update my blog. I asked my husband that we will go the beach and just take time to enjoy the sea breeze. It feels like 90's so; we just went around the beach area and drove down Merritt Island and Cape Canaveral. We pass by the bridge heading to where Kennedy Space Center and boy, it was so gorgeous at night time. I will be back with a nice camera and definitely post it here.There was a small island in one side and the water glimmers from the reflection of the sunset. On the other side of the Indian River, I saw a plane, looks like a biplane docking on the waters and enjoying the sunset in the middle of the river. Whoever they are, they must have a romantic evening. Lucky people!

Cheddar Bacon Potato Frittata Recipe

A frittata has all the same components of an omelet; it is an egg-based dish that can have any variety of savory fillings. However, it’s a lot less fussy to make. If you don’t have the patience or technique to craft the perfect omelet, a frittata is an easy way to replicate the flavor without all the flipping. This is a great Sunday brunch dish; it can be served alongside cheesy hash brown casserole for a hearty meal, or a fresh fruit salad if you’d like to keep it on the lighter side. Either way, it is substantial enough (and tasty enough) that you’ll be tempted to indulge in it for lunch or dinner or as well.

This dish can be prepared in a nonstick skillet; however, it is finished under the broiler, so if your handle isn’t ovenproof, it will need to be wrapped in foil. If you’re wary of putting a nonstick skillet into an oven, a cast-iron skillet is a good alternative. It’s completely melt-proof, and will lend a nice crust to the eggs.

Thaw out 2 pounds of frozen hash brown potatoes; you can get them with onions and peppers already mixed in, which adds a nice punch to this dish. Next, dice four slices of bacon and cook them over medium heat in whichever skillet you choose, until they are nice and crisp. Using a slotted spoon or spatula, transfer the cooked bacon to a paper towel to drain off the excess fat. Discard most of the drippings from the pan, but reserve one tablespoon. Add the thawed hash brown potatoes and cook for two minutes, stirring occasionally. At this point, you can preheat your broiler.

In a medium bowl, beat 6 eggs until well-combined. Season the eggs with ½ teaspoon of salt and stir in ¼ cup of milk and 1 cup of shredded cheese. Taco cheese or nacho cheese will play well off of the onions and peppers and give your dish some added pizazz. Add the egg mixture to the potatoes in the skillet and stir to combine. This is the last time you will stir the dish, as you’ll want the eggs to begin setting.

Cover the skillet and stir until the eggs are set on the bottom and sides, about 6 to 8 minutes. The center will still be liquidy at this point. Remove the cover and sprinkle the diced, cooked bacon and an additional ¾ cup of shredded taco or nacho cheese over top of the frittata. Transfer the skillet to the preheated broiler, about 5 to 6 inches from the heat. Cook for an additional 2-3 minutes until the center is firm and set and the cheese has melted. Let it cool for a few minutes, then slice and enjoy no matter what time of day it is!

Affordable Flights : Insane Price

Few days ago, I received a letter from an airline company informing me the miles I gathered with my travels in three years. I was amazed to know that I got almost 70K miles. I can exchange these miles into flights to anywhere I want so; I checked the fare value in Asia and Europe flights using the saver award offers. I can also use my miles if I choose to cruise to Caribbean, Bahamas or nearby islands.

I was blown away because if I choose to use 65K of my miles, I only pay less than $100 for round trip tickets to Asia. It is pretty awesome huh? I wonder if I can get the same amazing price cut and flight deals at www.insanelycheapflights.com site. I heard that they offer affordable flights too. Anyway, cruising to Caribbean is interesting and I would love to visit Montego Bay in Jamaica. I have a Jamaican friend who travels back to her home country to spend Christmas vacation at Jamaica. She and her family of 6 spent a week at Montego Bay. She was able to purchase cheap tickets to jamaica for the whole family and they spent an unbelievable fare but, I forgot where she got the deal. I might call her up anytime this week and asked about it.

So far, I have good deals in Europe. If I travel to Switzerland to visit a friend, I have to use 60K miles and spend $50 in cash for round trip tickets. That's unbelievable right? That's the good thing when you have miles point to keep. Definitely, I will be using my miles to visit a friend, travel to Asia or fulfill my dream vacation in Rome on Holy Week next year. If my husband will travel with me by that time then, we have to purchase his full priced ticket. Not bad at all especially when we can find a discounted price too. Wandering Birds

This is the last time that I have seen the birds wandering our front yard. I wonder where they are or where they usually go. They are groups of 8 and I saw them in two different ocassion, twice in our neighbors front yard and on this particular day at ours.I do not know what type of birds they were. I am sure they will comeback in our property in the near future. I would love to take an upclose photos of these birds somehow. How about you? Have you seen birds wandering around in your yard?

Living in Coastal Areas

It is beautiful to live nearby the waters because of the endless opportunity of watching an awesome view. This is a boat ramp along Indian River at US 1 in Port Saint John. US 1 is the fantastic scenic route for travelers and the amazing view such as this picture is so surreal! We moved here in Cocoa just two months ago and we love this place. This particular location is just 4 minutes' drive from our home. People come here to go fishing and enjoy boating.This place is a good location to watch the rocket lift off at Cape Canaveral Air Force Base which is across the Indian River. This boat ramp is also a nice area to watch the beautiful sunrise in fact, I posted some of the pictures in this blog. You will be amazed! Anyway, my husband and I were here on this particular day to watch the Atlas V Rocket lift off!

Beautiful Clouds

When I had my practice teaching during the last semester of my studies, I have a smart pupil in the class. I was teaching Science subject for a class of 5 year olds'. It was about rainy, sunny, windy, and stormy days. After the discussion, he raise his hand and asked about the kinds/types of clouds. Armed with the knowledge, I elaborate and extend the coverage of the lesson for that day. He was so attentive and he memorized the 10 types of clouds. Quality and Elegant Mailbox

Since my husband was retired for almost 4 years now and I worked from home, we practically own our time. We have no strict routine such as waking up early or should be home at certain time in the evening. We go with the flow of time. Traveling either short distance or 10 hours away from home is just normal for us especially when we are bored. Birds at the Front Yard

We have a bird bath at the front yard minus the bird feeder because the squirrel is hanging out on the treetops and they ate the seeds intended for the birds. The birds love to bathe early in the morning and the squirrel is after them so; they would fly away once they saw the squirrel snooping around. It rained in Orlando and Cocoa yesterday. In fact, it rained from 11 AM until night time. We went to the boat ramp to see the Atlas V Rocket launch and when we went home, there were 8 big birds at the front yard eating and digging down the grass. I don't know what they are though. They are smaller than the ducks. They look like chickens *wink*. Anyway, it's okay with me if they come around once in a while. I like watching them having a party at the yard.

Boat Ride From Atlantis to the Port of Nassau

When we arrived Nassau at the Island of Providence in Bahamas, my husband and I decided to go and see the Atlantis Resort in Paradise Island. We took the ride of the van paying $5/person and we went shopping in the Atlantis Resort. The prices are expensive so; we just bought some souvenirs which are made locally.I told my husband that on the way back to the Island of Providence where Nassau is, we will be taking a ferry ride. The fare is affordable, just $3/person. The view from the ferry ride was awesome! The water is so clear and clean! It takes few minutes ride all the way to the Port. Everyone will pass inside the Festival Place for checkpoint. Always bring your passport, ID and the card from the ship.I would recommend that you should try the ferry ride. There was a Bahamian who kept us entertained with stories about the buildings that we saw during the ride. It was really fun. We gave him a small amount of tip/donation. The bridge above connects the Island of Providence and the Paradise Island.In the picture (above) shows the happy faces of tourists. We listen attentively to the man who kept our ride a very interesting one. Do not forget, if you visit Nassau, take the ferry ride or you will miss a lifetime *wink*!

Cruising in NCL : Norwegian Sky

Our Cruising to Bahamas for the first time was not planned at all. We have a family who stayed with us for two weeks and both came from Spain. I was browsing my bank account at that time and they gave me a promotional offer for $250/person for a last minute cruise. We only have 2 days to prepare our documents and everything went smoothly.We traveled to Miami since our Port of Call was at the Miami Port. My husband hated this city because of the traffic ... oh, I like it alright. Our two visitors were having a grand time. We leave and park our car in the port parking lot for 4 days. It was a rainy cruising but, it was fun and certainly did not ruined the trip.Norwegian Sky is a huge ship with 934 crew and majority are Filipinos. The processing of papers were fast and they only look for my State ID, hubby's passport, and the other two's passport also. The party, activities, programs and food started right away as we boarded the ship. Of course, it was almost 2PM so; we are famished. We dine in the garden buffet and the food was truly great! It seemed like I was in PI again. I bet their cooks are Filipinos too. They served variety of food and all of us enjoyed the food a lot!After we ate, we went to the 12th deck to see the other ships departing the Miami Port ahead of us.It was fun because there were live bands in the pool area, food was served lavishly considering this ship has a freestyle dining. Eat what you can eat is the thing here.4 days is not enough! I would love to do it again and for longer period of time. Thanks to my bank for giving me such awesome deals!

Skywatch Friday : Tropical Storm Beryl

It was almost 5 AM and I was still awake. I was watching the local news following the weather report on Fox. A tornado warning was issued in some areas up north of Florida. The weather here now is alright compared last week. Rain was on and off. Thunder and lightning were not that bad but still, I don't like storms especially when we are on the road.It is not hurricane season yet, Storm Beryl has made it's landfall along Jacksonville Florida tagging a 70mph winds. We felt the intensity of the storm here in our area. The thunder is scary and we only have rain. The wind is not that bad. I hope Beryl will weaken soon. Jacksonville suffered flooding and some of them have no electricity. Some power lines were knocked down by trees.Today, we will be going to Orlando and I hope there will be no rain.I don't like to see a miserable sky like this.
